Belgian Waffles with Blueberry Jam
1 cup All-purpose flour
1 cup whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3 tbsp. light brown sugar
3 large eggs at room temperature
1/4 cup unsalted butter melted and slightly cooled
2 cups buttermilk at room temperature
1 tsp. pure vanilla extract
Berries, blueberry jam, and maple syrup, for topping waffles

Preheat waffle iron. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and brown sugar. If you have any brown sugar clumps, use your clean hands to unclump the sugar and whisk again. In a medium bowl, beat together eggs and melted butter. Stir in the buttermilk and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined.
Spray the waffle iron with nonstick cooking spray. Pour the recommended amount of waffle batter onto the hot waffle iron. Close the waffle iron and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately.
Top with maple syrup, blueberry jam, fresh strawberries & blueberries
